Apple Cinnamon Muffins

Muffins are a popular snack in my household when school starts. My girls always request muffins in their lunchbox and they are also oftentimes breakfast in the car! These healthy apple cinnamon muffins are moist and oh so delicious!

Ingredients (makes 15 muffins)

  • 1/2 cup of sugar

  • 1/2 cup of maple syrup

  • 2 eggs

  • 1 cup of applesauce

  • 1 Tablespoon vanilla

  • 3 cups flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 2 teaspoons cinnamon

  • 3 cups of grated apples 

  • Brown sugar for topping

 

Instructions:

(1) Preheat oven to 350 degrees and line muffin pan with 15 paper liners.

(2) Cream together sugar, maple syrup, eggs, applesauce, and vanilla. 

(3) In a separate bowl, whisk together flour, baking soda, salt, and ground cinnamon. Add dry ingredients to creamed mixture and mix until combined. Mix in the grated apples. 

 

 

 

 

 

 

 

 

(4) Fill paper liners to the top and sprinkle each muffin top with brown sugar.
