Black Bean and Corn Salad

This black bean and corn salad is quick to throw together, healthy, and filling. I like to eat it as a salsa and dip tortilla chips in it, put it on tacos or quesadillas, or eat it on a green salad. 

Ingredients:

  • 1 can (11oz.) of corn drained and rinsed

  • 1 can (15oz.) black beans, rinsed and drained

  • 1/2 an onion diced

  • 1 medium red pepper, diced

  • 1 tsp of garlic powder

  • 1 tsp of cumin

  • 1/4 cup of fresh cilantro

  • 2 tbsp of fresh lime 

  • salt and pepper, to taste

Instructions:

1. Drain and rinse the beans and corn and put  them in a bowl.

2. Dice up the onion and red pepper and add to the bowl.​

4. Add garlic powder, cumin, salt, pepper, cilantro, and lime juice to the bowl and stir.​

5. Enjoy!
