Coconut Curry Chickpeas

This quick and easy dinner hits the spot on a chilly evening when you are craving a warm, comforting, and a filling meal. This chickpea coconut curry dish is so delicious, full of protein, and super healthy! Enjoy with basmati rice or a rice of your choice.

Serves: 4-6 people.

Ingredients:

 

  • 1 tablespoon of olive oil

  • 1 small to medium onion, diced

  • 4 cloves of garlic, minced

  • 1/2 teaspoon of ginger powder or an inch of fresh ginger, minced

  • 1 teaspoon of cumin

  • 1 tablespoon of red curry paste

  • 1/4 teaspoon of turmeric

  • 1 can of coconut milk

  • 2 15oz. cans of chickpeas, drained and rinsed

  • 1 15oz. can of diced tomatoes

  • 1 cup of veggie broth

  • 2 teaspoons of sugar

  • 1/2 teaspoon of red pepper flakes

  • salt and pepper to taste

  • basmati rice or rice of choice

Instructions:

1)  In a large saucepan, saute the onion in olive oil until translucent, and then add garlic and ginger, and stir.

2) Add cumin, curry paste, turmeric, and chickpeas, and cook for 2-3 minutes.

3) Add in the diced tomatoes and coconut milk, and stir.

4) Stir in the veggie broth, sugar, and red pepper flakes, bring mixture to a boil, then reduce heat to simmer.

 

5) Cover and simmer for 20-30 minutes, stirring occasionally.

6. Serve with basmati rice or your rice of choice. Naan bread is super delicious with this meal!
