Blueberry Bran Muffins

These bran muffins are a classic bran muffin recipe with a healthy twist. They have applesauce instead of oil and a heaping cup of freshly picked blueberries. I also added in some cinnamon for fun and for flavor. These muffins are loaded with 7g of fiber and only have 1g of fat. The blueberries make these bran muffins extra delicious and moist. 

Makes 12 Muffins

Ingredients:

  • 1 1/4 cups of flour

  • 1/2 cup of sugar

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 2 cups of All Bran Buds

  • 1 1/4 cup of oat milk (or any type of milk)

  • 1 egg

  • 1/2 cup of applesauce

  • 1 cup blueberries

Instructions:

1. Preheat oven to 400 and lightly spray a 12-tin muffin tray

2. In a small bowl, stir together flour, sugar, baking powder, and salt.

3. In a medium size bowl, mix together the bran buds and the milk and then let sit for a few minutes until the bran buds soften.

4. Add the applesauce and egg to the bran mixture and mix well.

5. Add the flour mixture to the wet ingredients, and mix just until combined and then fold in the blueberries. Do not over mix.

6. Fill the muffin tins up to the top and then sprinkle each with cinnamon.

7. Bake the muffins for approximately 25 minutes, or until a toothpick comes out clean.

8. Let the muffins cool and you can store in an airtight container in the refrigerator.
