Healthy Pumpkin Corn Muffins

Healthy Pumpkin Corn Muffins are made with a few simple, natural ingredients. Perfect on the go snack with just a touch of sweet and the perfect twist of classic corn bread with pumpkin....so good!

Ingredients:

  • 2 eggs (can you flax eggs, if desired)

  • 1 cup of canned pumpkin

  • 1/2 cup milk (non-dairy or dairy, your choice)

  • 1/4 cup maple syrup (add more if you want sweeter muffins!)

  • 1 cup cornmeal

  • 1 cup of white whole wheat flour (can use almond, oat, GF flour, or any flour of choice)

  • 2 teaspoons baking powder

  • 1/2 teaspoon sea salt

  • 1 teaspoon of cinnamon

 

 

 

 

 

 

 

 

 

 

 

 

 

Instructions:

  1. Preheat oven to 350 degrees and line a muffin tray with liners and grease well

  2. In a large bowl, whisk together eggs, pumpkin, maple syrup and milk

  3. Mix in the cornmeal, flour, baking powder, salt, and cinnamon until fully combined

  4. Fill muffin tins and bake in oven for 20-25 minutes, or until you stick toothpick in and it comes out clean.
