Homemade Black Bean Burgers

These burgers are easy, fun to make, super good for you, and filling! Have the burger on a bun with all of your favorite toppings or on a salad with a bunch of fresh veggies. 

Makes 6 Burgers.

Ingredients:

  • 2 cans of black beans, drained and rinsed

  • 2 onions, finely chopped

  • 2 tsp of cumin

  • 1 tsp of oregano

  • 1 tsp of chili powder

  • 1/2 tsp salt

  • 1 tsp garlic powder

  • 1 tbsp olive oil

  • 1-2 tbsp of vegetable broth (depending on consistency)

  • 1/4 cup of oatmeal

  • 1/4 cup pumpkin seeds

Instructions:

1. Chop and saute onion on low heat until translucent

2. Drain and rinse 2 cans of black beans and then mash them in large bowl

3. Blend oatmeal and pumpkin seeds in blender until breadcrumb like consistency and then put them in the bowl with the beans.

4. Add all spices and olive oil to the bowl with the onions

5. Mix all ingredients together in the bowl and then form 6 large patties

6. Cook the patties in a skillet on medium heat, a few minutes on each side. You  may need to flip them a couple times. They are done when they are lightly brown and crispy on both sides.

7. Enjoy!
