Pumpkin Oatmeal Chocolate Chip Cookies

These cookies are healthy and filling and not to mention delicious! There are only a few simple ingredients that take minutes to throw together. These cookies are thick, moist, and most importantly nutritious. A great snack for on the go that everyone in the family will enjoy!

Ingredients:

  • 1 cup of pumpkin

  • 2 1/2 cups of oatmeal

  • 3 tbsp of maple syrup

  • 1/2 cup of chocolate chips

  • 1 tsp of pumpkin pie spice

  • sprinkle of cinnamon

Instructions:

1. Preheat the oven to 350 degrees.

2. Combine the first 5 ingredients in a mixing bowl until thoroughly mixed

3. Grease a baking sheet and form 6-9 cookies (depending on how big you want your cookies) with your hands and put them on the baking sheet.

4. Sprinkle cinnamon on top of the cookies.

*Please note that these cookies do not spread or change shape while baking so make the shape of the cookie you want on the baking sheet.

5. Bake the cookies for 15-20 minutes depending on how big you make your cookies

6. Let the cookies cool for a few minutes before eating. They keep well in the refrigerator.
