Soft Banana Oatmeal Raisin Cookies

These cookies are a combination of banana bread and oatmeal raisin cookies! They taste like little pieces of soft and chewy banana bread with a touch of cinnamon and the chewiness of an oatmeal cookie. Applesauce is used in place of butter, and they are packed with 3 cups of oatmeal! These cookies are a great little snack when you are craving something a little sweet but healthy.

Ingredients:

  • 1 cup of applesauce

  • 3/4 cup of brown sugar

  • 1/2 cup of granulated sugar

  • 1 tsp of vanilla

  • 2 bananas 

  • 2 eggs

  • 2 tsp of cinnamon

  • 3/4 tsp of baking soda

  • 1/2 tsp of salt

  • 2 1/2 cups of flour

  • 3 cups of oatmeal

  • 1 cup of raisins

Instructions:

1. Preheat the oven to 375 degrees.

2. Combine the cinnamon, baking soda, salt, and flour in a large bowl and set aside.

3. In a different bowl, combine the applesauce, brown sugar, granulated sugar, and vanilla with an electric hand mixer.

4. Add the 2 bananas and 2 eggs to the wet ingredients and continue to mix with the electric hand mixer.

5. Add the flour mixture to the wet ingredients, as well as the oatmeal and raisins and mix by hand.

6. Grease a cookie sheet and then scoop the cookie dough onto the cookie sheet. Makes approximately 30 cookies.

7. Bake them for 10-12 minutes.

8. Enjoy!
