Vegan Meatballs

These meatballs are perfect when you are craving a warm, comforting, and satisfying meal. It is fast, delicious, and most importantly healthy, nutrient rich, and guilt free!

Ingredients (4 servings):

  • 1 box of pasta (I used chickpea pasta)

  • 2 jars of your choice of pasta sauce

  • 1 15 oz. can of black beans, drained and rinsed

  • 1 tsp of garlic powder

  • 1 handful of fresh basil

  • 1/2 cup of bread crumbs

  • 1 tsp of tomato paste

  • 1/2 tsp of mustard

  • 1 tsp of oregano

  • salt and pepper

Instructions:

1. Preheat the oven to 375 degrees 

2. Mix the black beans, garlic powder, basil, tomato paste, bread crumbs, mustard, oregano, salt, and pepper in a bowl until well mixed. 

3. Make 20 small meatballs with your hands and place them on a cookie sheet with parchment paper and bake for 25-30 minutes.

4. While the meatballs are baking, boil the water for your choice of pasta and cook the pasta.

5.Before the meatballs are done, pour the 2 jars of sauce in a skillet and heat on low. 

6. When the meatballs are done, carefully place them one by one in the sauce and allow them to sit and warm in the sauce for a few minutes.

7. When the pasta is done, drain the water, and serve the warm meatballs on the pasta.

8. Enjoy!
