Zucchini Lasagna

Warm, cheesy, satisfying, and deliciousness is what comes to mind whenever I make this zucchini lasagna dish. This wholesome zucchini lasagna is made with all natural ingredients, is low carb, low calorie, high protein, and naturally gluten free! I believe any recipe can be made with a healthy twist. You love lasagna? Then you should be able to enjoy it guilt free!

Ingredients (serves 8):

  • 4 medium zucchini, sliced into 1/4 inch slices

  • 1/4 cup parmesan cheese

  • 2 cups mozzarella, shredded

  • 3 cups tomato sauce

  • 3 garlic cloves, minced

  • 2 small yellow onions or 1 medium to large, diced

 

Ricotta filling:

  • 1 1/2 cups Ricotta cheese

  • 1/4 cups parmesan cheese

  • 1 egg

  • 1/4 teaspoon black pepper

  • 2 tbsp of dried basil

Instructions:

1. Preheat the oven to 350 F. Lay zucchini noodles on paper towels and sprinkle with coarse sea salt - let sit for 30 minutes or more so zucchini sweats any excess moisture. Use paper towels to press and dry zucchini noodles. This is a very important step because zucchini has a lot of excess water and this dish can become very watery if this step is skipped.

2. While zucchini is sweating, saute the garlic and onion until soft and translucent and then add in the tomato sauce and warm on low. Feel free to add in ground turkey or hamburger into the sauce.

3. Next, mix all of the ricotta filling ingredients together in a bowl.

4. In a 13x9 baking dish layer lasagna - thin layer of sauce, zucchini noodles, ricotta filling, and mozzarella cheese. Repeat until finished. On top layer with sauce, mozzarella cheese, and parmesan cheese. 

5. Bake for 45 minutes uncovered then broil for 3-5 minutes until cheese is browned. Let sit for 10 minutes before slicing and serving. Enjoy!
